Toddler-Approved Chocolate Spinach Muffins

It seemed over the past couple of months, I had been having a hard time getting my girls to eat their vegetables. Picky eaters. They like to take the food, chew the food, spit the food on the floor, and repeat.

Annoyed, I started brainstorming of ways to get them to eat their vegetables and finally a lightbulb went off, an AHH-HAA moment. I was going to try hiding vegetables in something sweet since they never have an issue inhaling a piece of chocolate. That sparked the idea of making some Chocolate and spinach muffins.

I will be honest, the idea of mixing spinach into a yummy chocolate muffin didn’t sound too appetizing but boy was I wrong! I felt like I was eating a chocolate brownie and I couldn’t taste the spinach at all. The best part was that my girls absolutely LOVED them. This was a mommy win for sure because not only were my picky girls eating, they were eating vegetables. Oh, and having a ton of fun helping me make them.

I’m not saying these muffins are totally healthy but I substituted a few ingredients to try to make them more so. I also add different vegetables like kale and zucchini from time to time to switch it up. They are all AMAZING!

Here is the complete recipe. I hope you enjoy it as much as we do!

CHOCOLATE SPINACH MUFFINS

INGREDIENTS

• 1½ cup all purpose flour

• 5 tbs cocoa powder

• ½ cup granulated sugar ( substitute sweetener if desired)

• 2 tsp baking powder

• ½ tsp baking soda

• ½ tsp salt

• ½ cup almond milk

• 1 brown egg

• 2 cups spinach, chopped

• 1 banana, mashed

• 1½ tsp vanilla extract

• ½ cup chocolate chips (I used milk chocolate)

• ⅓ cup coconut oil, melted

BAKING INSTRUCTIONS

1 Preheat oven to 350

2. Gather spinach and chop fine using these Herb Scissors. Once you’re finished, in a large Pyrex Bowl, add all the dry ingredients (except spinach) together

3 In another bowl, melt the coconut oil and add in the remaining ingredients, including banana and spinach. Once you add the ingredients, add both bowls together and stir well

4 Place baking cups in a muffin pan and fill each one up about ¾ full

5 Bake for about 20-23 minutes.

6 Serve and enjoy
